After living for a week on the contents of a food box, a Cornish chef has written a recipe book to help families produce mouthwatering meals from food bank donations.
Sanjay Kumar’s Thinking Outside the Box contains 12 recipes to help families produce tasty meals from the often eclectic mix of items contained in foodbank boxes.
Mr Kumar, who works at the Headland Hotel in Newquay, said: “At the foodbank I saw people were donating random stuff and others didn’t know what to do with it so I lived for a week on the contents of a food box and wrote a recipe book on the basis of that.”
Thinking Outside the Box has been so successful that Truro foodbank are handing out copies with their food boxes.
Mr Kumar, who has also worked with foodbanks in Bodmin and Penzance, is now looking for other chefs to demonstrate to people across Cornwall that good food can be made from minimal ingredients.
Mark Yeoman, head of communication at the European Social Fund Convergence Program, said: “Sanjay is a great example of a social entrepreneur. He has identified a real life challenge - making the most of the sometimes random contents of a food box.
“Using his skills as a professional chef and through his personal experience he has provided a solution that will make a big and lasting difference."
There are more than 30 foodbanks in Cornwall which provide often an often vital source of food for people struggling with the cost of living.
